how its done

Judges visit our site to "tag" the briskets that will be prepared for competition with metal seals.  The finished briskets are then later cut for turning in with the judges watching closely. We cooked more than 30 briskets this year.-- "We turn in the best, and give away the rest". Hope you came by and had some.
